Grapes: blend of Barbera and Croatina grapes coming exclusively from our Ziano Piacentino vineyards
Cultivation system
Spurred cordon with planting density of 4000 plants per hectare.
Production
Manual harvest of the grapes in October. Destemming, alcoholic fermentation and maceration on the skins for 4/6 days at a temperature of 26°C.
Malolactic fermentation and subsequent decanting to facilitate clarification. Maturation of the wine in tanks for 4 months and subsequently refermentation in autoclave with the Charmat method. Bottling takes place 5 months after the grapes have been harvested.
Organoleptic characteristics:
COLOR: Intense ruby red.
BOUQUET: Vinous, fresh, intense, characteristic and fruity with notes of dried plum, blueberries and berries.
TASTE: full-bodied, full and slightly rounded.
ALCOHOL CONTENT: 12% vol.
Food pairings:
Ideal with second courses based on red meats, roasts and braised meats. Also excellent on its own and with aperitifs based on cured meats and cheeses.
Service:
Serve chilled at 10°-14° C.
